CHICAGO ? July 19, 2012 ? Trump International Hotel & Tower? Chicago is pleased to announce the appointment of two new experts to the property?s award-winning culinary team ? Patrick Fahy as executive pastry chef and Christopher Heisinger as executive sous chef. Fahy and Heisinger bring impressive experience working in some of the world?s finest kitchens to their positions at Trump Chicago, strengthening the industry profile and culinary excellence of the property?s food and beverage outlets. Both chefs will work closely with Executive Chef Thomas Lents on the daily management of and execution for Sixteen, which recently received a glowing four-star review from Chicago magazine.

Executive Pastry Chef Patrick Fahy

With tenures spanning the globe ? from Italy to California ? Chef Fahy has experience presenting exquisite pastries at some of the world?s most reputable dining establishments. Most recently, he served as executive pastry chef for the Sofitel Chicago Water Tower, where he oversaw all aspects of the hotel?s pastry operations, including its contemporary French restaurant Caf? des Architectes. From 2009 to 2011, he was pastry chef for renowned Chicago institutions Blackbird, Avec, and Publican, during which time he received a James Beard Foundation Award nomination in the Outstanding Pastry Chef category. Chef Fahy has also held several other positions in the Midwest and on the West Coast, specifically as chef de partie at The French Laundry (Yountville, CA), pastry cook at the Ritz Carlton Hotel (Chicago, IL), baker at Bittersweet Bakery and Lutz Pastry Shop (Chicago, IL), cake decorator at La Brioche Bakery (Madison, WI) and pastry cook at Restaurant San Vito (Montelupo, Italy).

With deep roots in the culinary community, Chef Fahy has participated in prestigious culinary events and festivals worldwide. He judged both the Cacao Barry L?art du Chocolatier Challenge in 2012 and the inaugural Chicago Restaurant Pastry Competition in 2011. He was named ?Best Pastry Chef? by the Jean Banchet Awards in 2011, and was also nominated for Food & Wine?s ?People?s Choice Best New Pastry Chef? award in 2012. He holds various degrees from renowned institutions, namely a one-year certificate in the culinary arts from Apicius in Florence, Italy, a certificate from the French Pastry School in Chicago, Illinois, a sugar course certificate from the Notter Pastry School in Orlando, Florida, and a chocolate course certificate from Valrhona in Tain L?Hermitage, France.

Executive Sous Chef Christopher Heisinger

A former colleague of Executive Chef Thomas Lents, Chef Heisinger brings a unique perspective, passion for the craft, and astute attention to detail to his position as executive sous chef of Sixteen. While pursuing degrees in the culinary arts from the Culinary Institute of America in Hyde Park, New York and applied communications from Northern Arizona University, Chef Heisinger held several line cook and sous chef positions across the country, including an externship at Jean Georges Restaurant in Manhattan and The Haymaker in Poughkeepsie, New York. From there, he moved to Las Vegas to embark upon a seven-plus year tenure in world-renowned kitchens, first as a professional stage at RM Seafood, then as a sous chef under Chef Lents at Restaurant Joel Robuchon, and, most recently, as sous chef at Le Cirque.
